Caramelized Bananas
Most plant-based kitchens use bananas frequently: for snacks, for baking, for “nice cream,” in smoothies, with toast or cut fruit, in sauces and dips, and the list goes on. If you have an abundance of bananas, perhaps getting a little riper than you like, this recipe for caramelized bananas is just the trick. They make a super topping for oatmeal or just enjoy them on their own.

Ingredients
1 banana
1 tsp. maple syrup
1 tsp. fresh lemon juice
Directions
Peel banana and cut in half, and then cut each half lengthwise. Put the 4 pieces cut side down in a small non-stick skillet (no oil needed). Turn the heat on medium high and cook for 3-4 minutes, until the bananas turn golden brown on the underside. Flip the pieces and add the maple syrup and lemon juice. Turn down the heat to simmer and allow the liquid to thicken a bit as you cook for an additional 2-3 minutes.
